Meet Gary Voiron, a Thibodaux native who has called Plaquemines Parish home for over 30 years. Gary has spent most of his life here, raising his three children—Lauren, Ellen, and Lane—and beef cattle. With a rich family history rooted in the cattle industry, Gary’s knowledge and experience with these animals span generations, giving him the tools necessary to be successful in the butchering business.
Gary has been around cattle all his life. From an early age, he was actively involved in his family’s livestock business, Voiron’s Stockyard. During his time there, he had various jobs and responsibilities: hauling, unloading, sorting and running livestock through the sale barn, working in the auction ring, as well as dealing with customers and buyers directly. Gary became proficient in understanding and marketing cattle, as well as earning customers’ and buyers’ trust. He later started his own operation of raising beef cattle, further expanding his knowledge and expertise. Gary has grazed thousands of cattle over the years for many large cattle buyers across the United States.
Since he was younger, Gary had a burning interest in the art of butchery. He aspired to have a career as a butcher and excelled in his coursework at a nationally recognized butchery school. Although Gary’s professional journey ultimately culminated in executive management roles in the energy sector and entrepreneurial endeavors, his desire to pursue his childhood dream never wavered. In 2020, he reached the pinnacle of his success and turned this lifelong dream into reality with Voiron’s Abattoir, an exceptional custom processing enterprise located in Greensburg, Louisiana. Renowned for his meticulous attention to detail, Gary has garnered admiration and respect from hundreds of customers, serving both distinguished restaurants and local families with equal professionalism and dedication.
Today, with the help and support of his family and friends, Gary’s leadership spearheads the thriving venture of Voiron’s Specialty Meats and Fresh Market—a full-circle achievement—at the heart of Plaquemines Parish in Belle Chasse. With a genuine commitment to his community, Gary aspires to establish Voiron’s as a premier butchery and fresh market, delivering exceptional quality and service to the surrounding area.
